Ingredients

if you want a more traditional chicken pot pie you just like, saute mirepoix in butter, add your favorite herbs and spices, add flour to form a roux, add stock and your soup bits, stir in some cream, mix in your already-cooked protein and any other fillings (frozen peas good), cover it in puff pastry, cut a few slits, and throw it into the oven for half an hour or until the puff pastry is golden
i like to use a lot of herbs de provance and paprika bc otherwise it can end up kinda bland
just make the stew thicker than you think you need
rh, brush the puff pastry with egg and then sprinkle big flaky salt on top
